Banana pancakes 

  
Ingredients : (serves-1)

  1.  1 cup all purpose flour (maida) 
  2. 1 cup Milk 
  3. 1 beaten egg 
  4. 2 ripe banana 
  5. 2 tablespoon sugar 
  6. Pinch of salt 
  7. Baking powder 
  8. Honey 

(Makes about 3-4 medium size pancakes)

Method :

In a bowl mix all purpose flour, add 2 tablespoons of sugar, pinch of salt, 2 tablespoon baking powder half a cup of milk and keep it aside   

Now in a mixer/blender add 2 fully riped banana and half cup of milk, blend till it forms a smooth thick paste.  (In most recipes it is said to mash the banana’s but the batter is more lumpy that way) 

Add milk and banana mixture into the flour mixture with 1 beaten egg. Mix it well the paste will be slightly lumpy but it’s ok. 

 The paste should be in the right consistency not too thick and not too thin, if it’s thick, you can add more milk till you get it right. It should be similar to this picture. 

  Heat some oil in a non-stick pan 
  Place a medium portion of batter and try to spread it out evenly with a help of a spoon. If you keep the pancake too thick it may not cook well from the inside. I know it’s not perfectly round!
  Flip it over. 
  
 Serve it with chopped bananas and some honey.
